Both of these come from the hip_domestics community which normally just makes me roll my eyes, but dude. Cupcakes with RUM or GUINESS?!

dude, I am so there.


Guinness cupcakes:
1 bottle (12 ounces) Guinness stout
1/2 cup milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
3 large eggs
3/4 cup sour cream
3/4 cup unsweetened cocoa powder, plus more for garnish
2 cups sugar
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda

and the frosting...
1 package (8 ounces) cream cheese, softened
1/3 cup heavy cream
1 pound confectioner's sugar

preheat oven to 350°F. in a large mixing bowl, combine the guinness, milk, vegetable oil, and vanilla. beat in the eggs one at a time. mix in the sour cream. in another bowl, whisk together the cocoa, sugar, flour, and baking soda. gradually mix the dry ingredients into the wet guinness mixture. butter (a lot! my cupcakes for stuck once) 24 muffin tins and fill w/ mixture. bake 25 minutes until risen and set in the middle but still soft and tender. oool before turning out of the tins.

to make the frosting:
beat the cream cheese in a bowl until light and fluffy. gradually beat in the heavy cream. slowly mix in the confectioner's sugar. dust cupcakes with cocoa after frosting.

Pick a flavourless noodle (like raman); rum has flavour, so there you go.

I don't think I can recommend using the spice package though.

Thanks for the link to my blog (Coconut & Lime) but be advised that the recipe you posted is not the original recipe. It is a rip off of my original, copyrighted recipe and does not work.

I'd actually thought about emailing you, because i've started reading your blog (which I LOVE!) and I was trying to make your cupcakes...and they, well, didn't turn out right. I'm not sure what I did wrong, and usually I'm a competent baker. first they overflowed from the tins, then developed sinkholes. I'm theorizing flaky oven temperature.

Feel free to email me any time! I am glad you enjoy my site but an sorry to hear about cupcake woes-maybe you over filled the cupcake wells? . I've made them twice and a few others have made them with no issues- but over flowing followed by sinking spells overfilling to me. It is a very fluffy/light batter so it is easy to do.

I'm definitely going to try again, because they tasted fabulous! Someone pointed out that I should have just filled the sinkholes with icing and pretended that it was supposed to happen that way.

that's always a good idea. A lot of recipes (esp. vegan ones for some reason) sink but taste fine. Icing hides a mulitude of sins.
