Last nights Dinner: Stuffed Pork Chops

Mince a large clove of garlic.
Add olive oil to pan, heat.
add garlic and preferred herbs.
add mushrooms.
When mushrooms are mostly cooked, add about a tbsp of balsamic vinegar.
Add a bunch of spinach, cut up.
when spinach is mostly cooked, squeeze lemon over it.
Let cool.
Into a bowl, chop up a tomato sans seedy goopy bits.
Add a minced clove of garlic, a bit of salt and a handful of feta.
Take two thick pork chops and butterfly them (making sure to leave enough on one side attached that they don't fall apart.)
Put into each pork chop a generous pile of spinach stuff and some feta. Smash it all in and pin closed with toothpick.
put into oiled baking pan.
On top of each, pile the tomato and feta mixture.
Bake for about half an hour at 350. Possibly a little less.
I served this with wild mushroom couscous (does it count as "serving" if you eat alone?) It was really very tasty. the juices from both the spinach and the tomato kept it pretty moist, and mmmm, feta.
