Foodporn: my lunch
Dec. 31st, 2006 02:28 pmSo today, I was getting ingredients for something to take to a party tonight, and realized I wanted to cook something. So I made the following:
In one pan, heat a bit of oil. add half a clove of finely chopped garlic.
When hot, add a pork chop that you have cut into small cubes.
Add Italian herbs of your choice. I used Penzey's Pasta Sprinkle.
In another pan, heat a mixture of butter and oil.
Add 1.5 cloves finely chopped garlic.
Add a couple handfuls of portobella mushrooms, cut into bite size or smaller pieces, one diced tomato, and a couple generous handfuls of spinach. (it cooks down a LOT.)
Add cooked pork to this pan, and cook until veggies are done. Mushrooms should be tender and spinach dark green and floppy.
Salt.
Serve over egg noodles.
