rumtastique: (girl with bowl - baking)
I should note that I found this in the Hip Domestics community. and forgot to note the author. I have not made it yet, but I really really want to.

1/3 cup maple syrup
2/3 cup light brown sugar
1 stick unsalted butter, melted and cooled slightly-plus additional for baking dish
3 teaspoons ground cinnamon
1/4 teaspoon gound nutmeg
3 tart apples (macintosh) peeled, cored, thinly sliced
1/2 cup dried cranberries
1 pound loaf challah-or other egg enriched bread i.e brioche
6 large eggs
1 1/2 cups whole milk (or 3/4 cup 2%milk with the 3/4 cup half and half)
1 teapoon vanilla

In large bowl combine the maple syrup, brown sugar, melted butter 1 teaspoon cinnamon and the nutmeg. Add apple slices and cranberries and stir in gently.

Lightly butter 13x9 glass pan and spread apple mixture on bottom. Cut ends off bread(discard or reserve for another use) Cut remaining bread into 1 inch thick slices. Place slices on top of apples overlapping slightly to fit. If necessary, cut bread to fill in gaps. You may have leftover bread.

In medium bowl, whisk together eggs and remaining 2 teaspoons of cinnamon. Then add the milk and vanilla. Stir to combine.

Pour egg mixture evenly over bread-soaking completely. Cover with foil and refrigerate at least 4 hours or overnight.

Preheat oven to 375 degrees. Bake, covered for 40 minutes. Uncover and bake an additional 5 minutes. Remove from oven and let stand 5 minutes. Cut into pieces. Serve with warmed maple syrup if desired.
